Purple Vienna produces purple, globe-shaped bulbs that are not much different in taste compared to the green variety, in my opinion; however, I know people who swear they can tell the difference. I would describe them as having a mild cabbage or turnip-like flavor with nutty overtones, and a texture similar to a water chestnut.
